Only few decades ago you would easily find in Roman trattorias some delicious dishes that might sound a bit wierd to you: Coda alla Vaccinara (Roman oxtail stew), Trippa (Tripe), Coratella (Lamb pluck), Lumache (Snails), Pajata ( intestines of an "un-weaned" calf), Cervelletto (Lamb Brain), Fagioli colle Cotiche (Beans with Pork Rinds).
